Dining in Ethiopia is characterized by sharing food from a common plate, signifying the bonds of loyalty, family, and friendship. The traditional Ethiopian meal has been served on a large platter that is draped with Injera , with the selection of foods. The dishes are prepared with a variety of unique spices which lead unforgettably striking dimensions to its exotic cookery. In fact,I will focus one of the famous dish called Kitfo made from raw meat and will discuss how to serve Kitfo. An interesting phenomenon among the food in Ethiopia is the love that the community has toward raw meat. In Ethiopian culture meat is considered a good food and one of the most sought after food items in the community.During Meskel(An Ethiopian Orthodox Christian Holiday), children go from home to home, greeting the elders, and at each stop their hosts have kitfo prepared just for them.Tera Sega (raw meat) is prepared in various forms. Kitfo is one of the best traditional foods prepared with raw meat, It is chopped beef which is freshly grounded(The chopping is part of the ceremony) just before serving. It served one of the three ways such as raw marinated in spices (mitimta) a spicy chili powder and butter (Kebbeh), warmed (lebleb) or fully cooked. Most people prefer uncooked meat (tera) to get the full experience of Kitfo. It is eaten by hand with injera or kocho. In fact, kitfo isn’t the only raw meat offered in Ethiopian cooking. There is also another dish that is prepared with tera sega (raw meat) which is known as Kurt. Of course, the animal such as cow or ox should be freshly slaughtered for both Kitfo and tera sega .In addition, there is a specific part of meat to make those dishes. For example, for kitfo the meat should be red that doesn’t have any white (fat); on the other hand, for Kurt it could be red meat that has a white (fat). According to legends, Ethiopians started eating tera sega (raw meat) centuries ago, they started eating this way to hide from their enemies because if they use a fire to cook their food, the fire might reveal them where they are and the enemy could attack them.
